Dad's mutton curry

And so people always say orang mamak pandai masak. My dad was well known with his kari kambing. It was his signature dish and even his non-muslim friends loved it! Whenever I had the chance, I would try to cook some. His famous mutton curry.

Too salty.
Too dried.
Too pedas.
Too cair.
Not enough curry.

And the worst.......

Tak empuk!

But it had never occurred to me to just gave up. Especially when Obe loves mutton so much (he was the one insisted for more). Obe tried Dad's mutton curry (which was cooked by him, not me!) and was hooked on it eversince.

"Eeeeeeee kambing! You nak buat kari daddy ke?" *shining eyes*

See? Kari daddy. We called it kari daddy. So famous eh kari daddy.

Anyway, I did tried many times and yesterday, guess what? I succeeded! Obe loves it so much! He ate it for breakfast with pancakes (took too long to cook it at night). I asked Afi dia cakap "Cuba lagi". But when I asked him what went wrong he said "Entah. Cuba je lah. Mana kentang? Kentang takde dia rasa lain kot". Hahahahaha.

I was out of kentang that time :| Bukan sengaja. Ok ok. Aku tak kedekut. Cuma kalau mahu sila cakap ini Kari Daddy. Bukan kari anda ok.

Oh how did I know the recipe? Observe baby, observe!

"Salin! Jom Daddy nak masak bla bla bla"

Thats mean yaw yaw cepat daddy nak masak cepat prepare otak ingat resipi! Oh, don't ask me why my Dad called me Salin :( No wonder Mama pun panggil Salin.

Ok now the recipe.

(Obe tak tahan letak atas meja aje die dah get ready dengan pancakes so I had to crop the smudges part)

Kari Kambing Daddy (Dad's Mutton Curry)

A.
500gm cubed mutton (boneless if possible)
2tbsp light soy sauce
1tsp salt

B.
6 shallots
4 cloves garlic
2cm ginger
5-6 dried chillies (soaked in hot water 15 mins)
7-8 cashew nuts (soaked in hot water 15 mins)

C.
4 shallots (sliced thinly)
1tsp mustard seed
1tsp coriander seed*
1tsp fennel seed* (ditumbuk together)
2 stalks curry leave
2 star anise
3cm cinnamon stick

D.
5tbsp curry powder
2tbsp chili powder
1tbsp kurma powder
1/2 cup water
2 potatoes (cubed)
2 medium tomatoes (wedges)
1 large bombay onion (diced)
  1. Marinate A for 30 minutes.
  2. Blend B and mix it with A and let it stand for another 30 minutes.
  3. Heat about 3tbsp oil in a frying wok. Fry C start with all the spices - shallots - curry leaves.
  4. Pour in the mutton mixture and heat in until a bit dry about 5 minutes.
  5. Meanwhile, combine curry powder, chili powder, kurma powder and water. Pour in the pan. Mix it well and continue heating with a low heat until thick and a bit dry. Check the tenderness of the mutton. When it is done, add the potatoes, tomatoes and onion. Continue heating for another 10 minutes (add more water if it is too dry).
There. Kari Daddy.

ps: mutton tend to be a bit masin after cook, so be careful with the salt ay. And please please marinate it well or you have to heat it abit longer to get it done.

pss: the last dish my dad thought me was Sup Tulang Asam Pedas which until now saya tak boleh ingat :( Dia ajar I remember somewhere around august last year when he was still strong to walk. Alfatihah.
